Professional Profile

Esteban Tapia Merino holds a Unesco Master's degree in Heritage and Sustainable Tourism from the National University of Tres de Febrero (Argentina). He works at Universidad San Francisco de Quito (Ecuador), where he teaches Ecuadorian Cuisine, Ethnogastronomy, Culinary Culture, among other courses. He is interested in researching the culture and food sovereignty of all peoples and nations, especially Ecuador, its cultural and natural diversity. He is passionate about discovering new ways to approach cooking and relating it to other areas of knowledge, such as Biology, Agronomy, Nutrition, Anthropology, and Communication. He carries out creative and scientific research projects, leads community engagement projects, and serves as a counselor for the Andean region of the "Slow Food" movement.
